Ground beef to the rescue!

I have a busy week ahead with meetings, kids’ programs and field trips. So to keep things running smoothly, I cooked up a batch of ground beef to help me whip up quick and easy meals.

I usually brown the ground beef (lean or extra lean — iron, zinc, protein and B12 plus 10 other nutrients) with onion, garlic, mushrooms (lots of B vitamins, selenium) and a can of lentils (rinsed and drained — fibre and protein). You can add as much or as little as these ingredients as you like, or add your own ideas (e.g. kidney beans, diced peppers, mixed frozen vegetables).

This super ground beef mixture can be transformed into tacos, spaghetti sauce, chili, pizza topping, or even macaroni and cheese. I usually cook extra and freeze dinner-sized portions, which are ok to keep in the freezer for up to 3 months. Looking for more ideas with ground beef?
