While it’s obvious to use quinoa as a side dish or something to serve a meal on, I was excited with the range of recipes in this book — breakfast, lunch, dinner and snacks. I even found quinoa flour in the organic section of my local discount grocery store. So far I’ve tried three recipes — broccoli and cheddar soup, stuffed pasta shells, and raisin bran muffins. All have been a hit with my kids (a big relief as they are very cautious about trying new foods).
Recipes on my to-do list: chocolate quinoa crepes, spanikopita frittata and pumpkin loaf.
