Couscous salad in 3 easy steps — enjoy hot or cold

Here are three simple steps to turn leftovers into a delicious couscous salad for the next day. I was reminded of this the other day while waiting at the deli counter beside a lady that paid seven dollars and change for about two cups of a couscous salad.

1) Microwave one cup of orange juice or low sodium chicken broth in a medium- sized bowl for about 1 1/2 minutes on high. Remove.

2) Add one cup whole- wheat couscous, cover bowl with a plate, let stand for about 2 minutes then fluff with a fork.

3) Add any leftover meat, canned/rinsed beans and leftover veggies (grape tomatoes, grilled veggies, cooked broccoli, frozen veggies). Try chickpeas and canned/drained diced peaches or diced sweet potato (which you can also cook in the microwave).
