Just spank it!

Of course, I’m talking pomegranates!

It’s better to eat those powerhouse antioxidants than have them squirted across the kitchen counter. Well I’ve always kinda butchered my pomegranates, but no more!  Try this:

  • Score the pomegranate across the top in a criss-cross. Stick a knife about half an inch into the the top and twist the knife enough to make it easy to pull apart the pomegrante into two pieces. Do the same to make four quarters.
  • Now, here’s the cool, not-so-messy part! Hold the pomegranate quarter over a bowl and with the skin side up and spank it with the back of a wooden spoon. Watch all the little bits fall into the bowl.

My kids will happily eat a bowl full and ask for more.  This time of year it’s also great for making a tossed or fruit salad look festive.
